When I was little, my grandma would always let me eat the tomatoes off her salads whenever we went to Sizzler. My family knows I love tomatoes, and even now, when we eat out together, they’ll sometimes sneak the tomatoes from their plates onto mine!
So when I discovered Mediterranean food (especially Mediterranean salads) I was obsessed! This has become my favorite salad to make because it’s fresh, simple, and goes with just about any meal. I also love serving it whenever we have guests over as it always impresses.
In fact, my sister specifically requested that I post this recipe, so I guess that’s a pretty good sign it’s a winner!
And don’t worry like most of the recipes I share, it’s incredibly simple and easy to throw together while baby watches.

Ingredients for 4 Servings
- 1 Cucumber
- 1 Avocado
- 10 Cherry Tomatos
- Balsamic Vingear
- Extra Virgin Olive Oil
- Optional: My Normal Keto Allulose Syrup
- We think this balances the flavors perfectly! The salad is still delicious without it, though, so don’t worry if you don’t have any in your pantry.
Instructions
- Cut the cucumber in half lengthwise, then cut each half lengthwise again. Slice across to create small bite-sized pieces.
- Cut the avocado into pieces about the same size as the cucumber.
- Slice the cherry tomatoes in half.
- Add a generous splash of balsamic vinegar, a drizzle of olive oil, and one squeeze of allulose syrup (if using).
- Toss everything together and give it a taste. If it’s too tangy, add a little more olive oil. If you’d like a stronger flavor, add a bit more balsamic vinegar and another small squeeze of allulose syrup.
